Zucchini Bread

I know this is a little early, but in anticipation of all the zucchini we will be getting thought I would share the BEST zucchini bread recipe.

3 eggs
3/4 cup vegetable oil
1 2/3 cups packed brown sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup raisins (I use golden raisins)
1/2 cup chopped walnuts (optional - I do not add)

1. In a large bowl, beat eggs well. Add oil, brown sugar, zucchini, and vanilla; stir well. Blend in flour, cinnamon, baking powder, soda, and salt. Stir in raisins and nuts.

2. Bake at 325 degrees for 1 hour. Cool ( I cooked a little less time so check it)

  1. Thanks a million! I love, love, love zucchini bread and cannot wait to make this! BTW - I planted my veggie garden last weekend to supplement my farm share. 4 roma tomato plants, 2 peppers, 2 basil, 4 chiles, 1 yellow squash and herbs - thyme, rosemary, cilantro, oregano and lemon balm.
